I didn’t do a step-by-step of this one (it’s my Chocolate Olive Oil recipe) BUT WOULD YOU LOOK AT THAT BEAUTY.
It passed the taste test with flying colors.
I buttered and sugared the sides of the cup, and I think that’s why it tried to take flight.
My stars that was a good souffle.
My first roux died.
Then I followed the recipe.
Sort of. I didn’t have paprika, so I put pepper in.
I hand-whisked the egg white again. I was afraid they were going grainy, but they held on long enough to bake. I salted the egg whites, since the last time I whipped eggs without adding anything to them was the Sea Foam Souffle of Death.I actually don’t remember if salt is one of the things that helps stabilize egg whites. I remember sugar does, and lemon juice, I think.
Either I over-filled the dish or under-whipped the egg whites…
Well…I’d call this a moderate success. It was a bit too wibbly.
And then I realized I forgot to put the cheese in…
I topped it with shredded cheese and salsa because it just tasted like eggs, but the texture was pretty fluffy and I’m gaining confidence in my whisking skills!
On that note, Clara was definitely not whisking fast enough to get those eggs forming soft peaks in the finale. However, I love her dress and she’s adorable and everything is okay with me.
Except for the Arrow season finale. That was not okay.
I made a souffle the other day but I still haven’t posted about it. Sorry. My roommate and I watched Nikita while we ate it and that distracted me enough that I forgot to upload the pictures. It’s coming soon.
